The National Restaurant Association’s annual "What’s Hot" culinary forecast predicts food and menu trends for the coming year. For 2017, they surveyed nearly 1,300 professional chefs and several sustainable concepts topped the list, including: hyper-local sourcing (restaurant gardens, on-site brewing); natural ingredients; locally sourced produce; locally sourced meat and seafood; sustainable seafood; food waste reduction; and environmental sustainability. The Northeast Waste Management Officials' Association (NEWMOA) developed the Green Lodging Calculator to help lodging facilities and sustainable hospitality programs estimate the financial and environmental benefits from sustainable practices. The calculator contains over 40 waste-, water-, and energy-related measures covering 18 common practices that lodging facilities can implement.
